If you’re looking for a fun twist on classic cheesecake, you’re in the right place. These individual cheesecakes on a stick are as delicious as they are cute—and they’re super simple to make. We’re talking creamy, dreamy cheesecake with a caramel drizzle, fresh strawberries, and a buttery graham cracker crust. Oh, and did I mention they’re on a stick? Ingredients:

  • 2 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

  • Fresh strawberries (for topping)
  • Caramel sauce (for drizzling, at room temperature)

  • Wooden skewers or sticks

Instructions:

  1. Prepare the crust:
    • In a bowl, combine the graham cracker crumbs and melted butter.
    • Press the mixture into the bottom of a standard muffin tin (or mini muffin pan) to form a crust. Use about 1 tablespoon of the mixture for each muffin cup.
    • Bake the crust at 350°F (175°C) for 5–7 minutes, then set aside to cool completely.
  2. Make the cheesecake filling:
    • In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract together until smooth.
    • Add the sour cream and mix until fully incorporated.
    • Spoon the cheesecake filling into each muffin cup or silicone mold, over the cooled graham cracker crust.
    • Smooth the top of each one using a spatula.
  3. Freeze the cheesecakes:
    • Place the muffin tin or molds in the freezer for 2–3 hours, or until the cheesecakes are firm enough to handle on a stick. The cheesecakes should be completely set before inserting the sticks.
  4. Insert the sticks:
    • Once the cheesecakes are frozen and firm, gently remove them from the molds or muffin tin. You can run a knife around the edge of each cheesecake to help release them from the molds.
    • Insert a wooden skewer or stick into the center of each mini cheesecake.
  5. Decorate the cheesecakes:
    • Drizzle room-temperature caramel sauce over the top of each cheesecake.
    • Place sliced fresh strawberries on top.
    • Dust lightly with powdered sugar.
  6. Serve:
    • Optionally, garnish with a fresh mint leaf for added color and flavor.

  7. Storage:
    • Store in an airtight container in the freezer for up to one week.
