Ingredients:

  • 2 tablespoons olive oil or butter
  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth (low sodium preferred)
  • 1 cup milk (or heavy cream for extra richness)
  • 1/2 cup shredded Parmesan cheese
  • 1 cup frozen peas or diced carrots (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Sauté the Chicken
    • Heat olive oil in a large skillet or pot over medium heat.
    • Season the chicken pieces with garlic powder, onion powder, salt, and pepper.
    • Add the chicken to the pot and cook for 4-5 minutes, stirring occasionally, until browned. Remove and set aside.
  2. Cook the Aromatics
    • In the same pot, add the diced onion and garlic.
    • Sauté for 2-3 minutes until softened and fragrant.
  3. Add the Rice and Liquid
    • Stir in the rice, ensuring it’s well coated in the onion and garlic mixture.
    • Pour in the chicken broth and milk. Stir to combine.
    • Bring the mixture to a gentle simmer.
  4. Simmer and Cook
    • Reduce the heat to low, cover, and let it cook for 15-20 minutes. Stir occasionally to prevent the rice from sticking.
    • Add the chicken back into the pot halfway through cooking.
